Muffins Made with "Complete Pancake Mix"

Its a beautiful Saturday Morning, and I and my family have the craving for some home-baked goods. Muffins preferably ;)
I reach into the fridge to grab some ingredients and my butter is all gone!! Well, I did bake a birthday cake for my two year-old daughter just two days ago. (Happy Birthday Annabelle xoxo)
SOooo, whats a baker to-do?! Buy some butter for 3x the price at the corner drug-store? -NO!
…I think I have some insta-pancake mix in the cupboard back there, somewhere…


"Complete Pancake Mix" Muffins

1 1/4 cup Pancake Mix

1/4 cup Sugar

1 Egg

2 Tbs. Oil

1/2 cup Milk

1/2 tsp. Vanilla or almond, or both!

1/8 tsp. Cinnamon and Nutmeg

+ 1/2 cup frozen or fresh berries, bananas, nuts, chocolate chips or whatever!


Mix dry and wet ingredients with a fork, and remember with pancakes, -don't "overstir", lumpy is good. Spray a 6 cup cupcake tin with non-stick oil. Fill with batter. If you like, sprinkle white sugar or oats on the top.

425 degrees for 11-14 mins

baby shower!

A dear friend, Daisy, is awaiting her baby boy ever so patiently!! Due any day now, Daisy had the craving for the Chocolate Ganache cake and a traditional Red Velvet, and I was more than happy to accommodate at her beautiful shower! Done by Meg and Becca of Social Graces, the little guy was welcomed with "little man" inspirations! With bow-ties, neckties, plaid and mustaches, the colorful and classically masculine theme was fun and entertaining!

happy birthday becca!


Becca of Social Graces and I are only one day apart in age!! ....being in the mood for birthday cake myself, I enjoyed making this Cafe Mocha Cake for her.
Chocolate cake saturated with a fresh espresso simple syrup and a layered filling of espresso buttercream, chocolate ganache, and chocolate mousse.

the big "three-O"



gotta have kick butt cake to commemorate your first thirty years!! i had the opportunity to create this cake for Nik White, the husband of my sister-in-law, Meg White of Social Graces. This is a red velvet cake with a traditional cream cheese icing and filling, then covered with chocolate ganache. yum!
